AI Bartender Mari: Experience the Future of Cocktails at Fairmont Seoul’s M29 Rooftop Bar

At M29, the signature rooftop bar of Fairmont Ambassador Seoul that offers a breathtaking view of Yeouido, a white AI robot bartender named Mari moved busily between rows of colorful cocktails lined up along the bar counter. Mari, capable of recognizing customer preferences and orders, shakes and crafts cocktails with precision, creating a scene rarely found in traditional hotel bars.

AI robot crafts welcome drinks

On February 8, the hotel industry reported that Fairmont Ambassador Seoul unveiled its AI Meets M29 promotion to mark its 5th anniversary. This program showcases a collaboration where human bartenders bring to life cocktail concepts and recipes proposed by AI. Rather than merely serving as a technical demonstration, the initiative focuses on translating AI-driven ideas into tangible, premium hotel experiences.

The promotion introduces five signature cocktails, each named and conceptualized by AI. These drinks symbolically capture Fairmont Seoul’s five-year journey, Yeouido’s unique rhythm, and the hotel’s vision for the future.

The featured cocktails are Red Genesis, Foggy Yeouido, Sunset Glow, Iron & Soul, and The Eternal 5.

This concept goes beyond a mere written description and is fully reflected throughout the actual course composition and overall presentation. Hotel bartenders have refined each cocktail, balancing flavors and selecting ingredients based on AI’s initial ideas. As guests progress through the menu, they can see the seamless integration of the AI’s creative direction and human expertise.

From sunset to fog: Yeouido’s landscape in a single course

As the course unfolds, each cocktail tells a part of Yeouido’s story. Red Genesis, the welcome drink, arrives as a striking red jelly shot, symbolizing Fairmont’s inception. Its floral notes and bright acidity, paired with a strawberry ricotta crostini, create an intriguing contrast of flavors and textures.

Foggy Yeouido follows, enveloping the glass in mist and releasing subtle herbal aromas reminiscent of the Han River at dawn. The gin’s botanical profile perfectly complements the rich flavor of smoked salmon, creating a seamless flow of visual and gustatory experiences.

The interactive Sunset Glow transforms from yellow to purple as guests add color, mirroring Yeouido’s famous sunsets. Paired with yuzu soy-dressed scallop ceviche, it offers a bright citrus kick balanced with savory umami. Iron & Soul, inspired by Parc1’s imposing structure, introduces smoky notes that dramatically shift the mood. The bold whiskey body pairs excellently with earthy truffle beef tartare, creating the most sophisticated combination. The journey concludes with The Eternal 5, a dessert cocktail layering bitter espresso with creamy mascarpone foam.

Storytelling cocktails: Human touch perfects AI concepts

A standout feature of AI Meets M29 is the presentation of Refined recipes alongside each cocktail. These recipes represent the evolution from the AI’s data-driven concepts to the bartenders’ real-world adaptations. For instance, when translating champagne into a jelly shot, flavor limitations were addressed. Overly floral herb-cocoa combinations were adjusted, and hard-to-source ingredients were substituted with accessible alternatives. This process of refining AI’s ideas into ‘drinkable experiences’ showcases the potential of human-AI collaboration in hospitality.

AI applications spread from convenience stores to hotel bars

As humanoid robots enter convenience stores, the hotel industry is also embracing AI. During this promotion, AI robot bartender Mari serves as a guest bartender alongside the hotel’s team, letting guests watch AI and humans collaborate on the cocktail-making process on-site. The program runs daily from 5:30 p.m. to 10 p.m. until February 28, and is limited to 20 to 25 guests per day.

A Fairmont Seoul spokesperson stated, “This groundbreaking project in the hotel industry demonstrates how AI-generated ideas can be transformed into real experiences by our staff. We are committed to using technology not just as a tool, but as a means to enhance Fairmont Seoul’s unique ambiance and guest experiences.”
